Zucchini is one of those foods I am absolutely in love with. It’s so versatile! You can eat it sweet or savory, it’s easy to prepare and it’s healthy to boot! Check out just a few of the health benefits! I always like to have a couple facts about veggies up my sleeve so I can get my kids to eat their veggies (“zucchini has lots of vitamin C, which helps the good guy cells fight the bad guy cells #boom 👊). Works like a charm!
You can shred zucchini and add it to seriously just about anything (check out this video to show the fastest, easiest way to shred zucchini)…. cookies, cake, break, pancakes, waffles OR even things like meat and burritos (this was the filling to stuffed peppers).

~Zucchini has more potassium than a banana
~ The best zucchini are those with the flower still attached; they are truly fresh and have a sweeter flavor
~Larger is not better! The larger one or more fibrous
~ botanically zucchini is actually a fruit!
~ One cup of zucchini only has 19 calories
~ they are harvested in spring and summer
~ you can eat the flowers
~ they are best stored loose wrapped in the fridge for 2 to 5 days. If they are fresh from the garden they can last in the fridge for up to two weeks!
~ when purchasing, look for small zucchinis that are bright-colored, firm and free of cuts and soft spots
